    A small roastery in the cold high steppe — three roasters, one drum, a stubborn idea that Mongolia could grow its own taste.

    Mongolia's first specialty roaster.

    A category of one. We learned by burning, by tasting, by traveling — until the cup told the truth.

  3. ACT III · METHOD

    Crop to cup. Probat-roasted. Obsessively crafted.

    Green beans sourced direct. Fired on a German Probat. Tasted, logged, and refused — until each batch earns its label.
